 Ingredients: 

  • 1 cup of yogurt
  • 2 tablespoons of gram flour (besan)

  • 1 tablespoon of oil
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of mustard seeds

  • Add the cumin seeds, mustard seeds, dried red chilies, asafoetida, and curry leaves. Fry for a minute until fragrant.
  • Pour the yogurt mixture into the pan and stir well.
  • Cook the kadi on low to medium heat for 20-25 minutes, stirring occasionally to prevent the yogurt from curdling.
  •  Once the kadi thickens and the raw smell of the gram flour goes away, turn off the heat.
  • Serve hot with steamed rice or chapati.

Ingredients: 

  • 250 grams of bhindi (okra), washed and sliced into thin strips
  • 1 cup of gram flour (besan)
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of red chili powder
  • Salt to taste
  • Water, as needed
  • Oil for deep-frying

 

Instructions: 

  • In a mixing bowl, combine the gram flour, cumin powder, coriander powder, turmeric powder, red chili powder, and salt.

  •  Add the bhindi strips to the batter and mix well, making sure that each strip is well coated.
  • Heat oil in a deep frying pan over medium-high heat.
  • Once the oil is hot, carefully drop the bhindi strips one by one into the oil. Do not overcrowd the pan.
  • Fry the bhindi strips until they turn golden brown and crispy.
  • Use a slotted spoon to remove the bhindi strips from the oil and place them on a paper towel to drain excess oil.
  • Repeat the process with the remaining bhindi strips.
  • Serve hot with your favorite chutney or sauce.

Ingredients:

  • 1/2 tsp of salt
  • 1/2 tsp of cumin seeds
  • 1/2 tsp of red chili powder

  • 1 tbsp of oil

Instructions:

  • In a bowl, crumble the paneer and add besan, water, onion, green chili, salt, cumin seeds, red chili powder, and turmeric powder. Mix well to make a smooth batter.
  • Heat a non-stick pan over medium heat and add 1 tsp of oil.
  • Pour a ladleful of batter on the pan and spread it into a thin circle.
  • Cook the cheela for 2-3 minutes on medium heat until it turns golden brown.
  • Flip the cheela and cook the other side for 1-2 minutes until it turns golden brown.
  • Repeat the process with the remaining batter to make more cheelas.
  • Serve hot with chutney or sauce of your choice and garnish with fresh coriander leaves.
